Perrenial winners of the Statesman's Best Of Salem when I was running this place!!

I am not sure what is in store for me, from real estate development, to Baqlawa Central, and I have some neat hand painted cards for sale at my Ebay store here.

The Soup Cellar is now being run by new folks, and I can tell you, well, let's just be polite and say it is different now. As regular winners in the Statesman's "Best of" series, I held a standard not many could ever match... but enough of that, the future is NOW!!

SOUPS to Reminisce Over

Here are 42 of my most popular soups! There are more, but maybe we need a hypnotist to get them out of me...

African Peanut Soup - Wildly popular and a favorite of many, it is really a more simple soup in the original tradition, but Marc could not leave well enough alone.. thankfully!
Belfast to Bombay - Originally a creative way to use leftovers; popularity changed that..
Butternut Squash Soup - One of the most requested seasonal soups, includes pears and apples..
Cabbage w/Lentils - A simple idea that turned into this amazing soup...
Cafe Beuf - Only Garrison Keillor fanatics remember this title, but the soup was a veggie beef w/barley and veggies, with hints of caraway, and cayenne.. maaahvelous!
Carrot Soup w/ Ginger - A vegan puree, not many of those here, and it took 4 years to perfect it, but I DID IT!!
Cauli Flower-Power - A hippie revival soup, especially when the Norman's 1.00 Cauliflower come in.. they are amazingly huge..
Chicken Borscht - This is world's different than the Vegan Borscht, and has a very different fan base!
Chicken Minestrone - My last new "favorite" suggested by Steve (or was that Chris)
Chilled Beet Soup - Abby said it was Orgasmic.. shall i say more?
Cinco De Mayo - Spicy and comes with a mariachi band, pork, barley and veggies
Cuban Black Bean - with rice/onion garnish. keeps you going all day long..
Cucumber-Dill Chilled Soup - The surprise of the summer for me, It turned out fantastic. amd the soy milk in it rocked!!
Curried Lamb w/ Veggies - Spiced Rich in the Indian tradion, combined with Marc's unique vegetable mix..
Curried Root Soup - More magic with leftovers and curry, a favorite of many..
Eastern Sun - One of many loved soups i specifically designed for our Vegan Customers.
Fresh Tomato Soup - This magic occured when there was a surplus of local tomatoes in the fall..
Garbonzo Root Soup - Originally thought of as a variation to the soup above, but I scratched the curry, increased the garbonzoes and created a mellow, nutty, rich puree unlike anything you ever tasted.
Garden Veggie in Salmon Stock - I experimented with this for a while, and it was hard to keep this really fresh fresh tasting, so I let it go.. but a couple times it turned out outrageously good. If I had more time for procurement and to baby sit this one, it would have been fun.
Garden Veggies w/ fresh herbs and corn - With Tofu or Garbonzo beans and wild rice.. a summer favorite..
Gazpacho - My european travellers said it was every bit as good as they got in Spain...
Green Velvet (Fresh asparagus soup) - When the local asparagus is in, we are making this a lot..
Hearty Vegetable - The first soup I ever made, still one of MY very favorites.. stock full of root veggies, brussel sprouts, and garbonzoes..
Lemon Chicken - I came across this gem when trying to pep up some leftovers.. lite, lemony, great with sage, and yet hearty with root vegetables, a soup paradox.
Marc's Cabbage Soup - Very lite and summery, hints of fresh herbs; no day is too hot to have some of this hot soup..
Marc's Lentil - Kelly's first favorite, I am not sure what it is now..
Marc's Medley - The ever luscious puree with hints of this and that depending on what I have in the way of herbs..
Marc's Mushroom Soup - If you blinked you missed it, only a few times, should have been more...
Mixed Bean and Barley - One day I thought.. why should the meat eaters be the only ones to get barley?? So voila, a vegan soup rich in a multitude of legumes and grains..
Momma Jade's Chicken Soup - If it didn't take two days to make, we would have had this more often..
Mostly Broccoli - I couldn't make it ALL broccoli, don't ask me why..
Mulligatawney - Sweet and Spicy, makes you want to play Crickett
Potato Asparagus - An opportunistic soup that disappeared quickly no matter how unexpectedly it arrived...
Rosemary Beef w/Barley and Veggies - Oh, the midwesterners felt so at home when I had this.. I could tell..
Rosemary Pork w/Barley and Veggies - Amazingly different, but the same idea!!
Rudi's Red Lentil - The new lentil soup on the block, created genuine separation from the regular Lentil, and had it's own fan base.. sort of a bootstraps story for soup recognition..
Summer Chowder - Potato Leek with Fresh Corn cut from the cob
Vegan Sunshine - I think Sheldon came three times in one day for this..
Vegetable Bean - This was best when i had nice garden green beans to complement black beans and garbonzos.. surrounded by root veggies..
Vegetable Bean puree version - Same stuff, but pureed with some soy milk and spiced a little differently, est voila a new soup!
Vegetable Borscht - (vegan) Walt has eaten 15.82% of all the Borscht we made..
Vichissoise - Actually this chilled potato soup was more fun to SAY than it was to eat (for me) but people loved it and I had a whole lot of fun with it!!
White Bean Soup - My brother's indian bay leaves gave this other beany puree a very unique aromatic presence

Fresh Fruit Smoothies - A 100 percent fresh fruit drink from apples and your choice of pears, pineapple, or oranges freshly juiced, then blended with banana. Some like it with a little chipped ice blended in...
Authentic Lebanese Baqlawa - Middle Eastern Filo pastry with walnuts and special floral syrup from Marc's old family recipe. Flakey, delicate, mouth-watering and bursting with flavor. Remember, life is uncertain, so Eat Dessert First !!
Scratch Brownies - Melissa's home recipe; rich and well, it's chocolate!
Chocolate Chip w/ Walnut Cookies - Make Mamazita Jade happy and have a cookie!
Peanut Butter - Chocolate Chip Cookies - Crunchy, yet melts in your mouth bursting with flavour!
Scottish Shortbread Cookies - Crunchy, but they melt in your mouth, exquisite!
Marc's Old Time Zuccini Bread - I have had this recipe since college, and it still is one of my very favorite quick breads... I gave it a special twist with a touch of orange zest!
Gonzo Garbonzo Scratch Veggie Burger - Marc's own special vegetarian burger made from garbonzo and black beans, basmati rice, onion, mushrooms, carrot, sunflower seeds, garlic and spices. Served with tomato and lettuce with yogurt tahini dressing on a pocket pita or Great Harvest Honey Wheat bread.
Lebanese Rolled Grape Leaves - Early customers will remember the amazing qualities of this dish, alas, success spoiled it for it took so long to make it properly, and I had so many mouths to feed, I had to drop it. In addition, the lamb riblets and ground lamb required became harder and harder to get in small quantities. The first fossil of Soup Cellar lore.
Fresh Hummus Plate w/ chevre - A high protien middle eastern dip made from fresh cooked garbonzo beans, sesame tahini, lemon, and garlic. Served with raw veggies, imported Lebanese olives, pocket pita bread and imported Goat cheese (or feta if you like).
Fresh Tabouli - Traditional Middle Eastern Salad with bulger wheat, parsley, tomatoes, fresh mint, lemon, cucumber, onion, green onions. Served with pocket pita, or as a ...
Tabouli Mezza Plate - A lunch plate with tabouli, hummus, feta cheese, calamata olives, raw veggies and pocket pita wedges.
Baba Ganouj - Roasted Eggplant Dip with garlic, lemon and sesame tahini. Served with pita bread.

Fresh BLACK BEAN Hummus Plate - Our classic Hummus recipe, applied to home cooked black beans with sesame tahini, lemon, and garlic. Served with raw veggies, imported Lebanese olives, pocket pita bread and feta cheese.
Lovely Lunch for One - Hummus with Pita and a cup of soup, for a slightly reduced price from a la carte.
Marc's Comfort Casserole.. - Lightly sauted veggies mixed with a touch of cheddar cheese, herbs and basmati rice, topped with marc's crunchy grain topping, baked until all the flavours have grown and blended. A home recipe from way back...
Summer Rainbow Pasta Salad - Tasty rainbow pasta with ever so slightly steamed and chilled veggies, Marc's Special Vinegarette, feta cheese, calamata olives, and perhaps a surprise garnish du jour..
Wild Rice Salad - Wild and Basmati rices, with fresh corn, green beans, carrots, pine nuts, special garnish, and more, with a very light and special yogurt dressing... a favorite Soup Cellar Summer Salad.
Curry Saute over Basmati Rice - Late fall mix with fresh green beans, cauliflower, carrots, onion, parsnips, garlic, and red cabbage, sauted with curry in butter, olive oil, and vegan vegetable stock, served over basmati rice with tahini-yogurt dressing and fresh cilantro.
Marc's Mushroom topped Yam or Potato - Sauted mushrooms, garlic and onions are smothered over a baked potato or yam, topped with fresh dill and a side of yogurt-tahini dressing. Wow.
Marc's Marvelous Butternut Topped Yam or Potato - Roasted Butternut squash is fluffed with a little butter and combined with sauted mushrooms, garlic and onions and stuffed into a baked yam or potato, topped with fresh dill and a side of yogurt-tahini dressing. Wow.
Potato Latke - a lunch sized potato pancake with yams, carrots, mushrooms, onions, and garlic, topped with tahini-yogurt dressing and fresh herb garnish
Stuffed Acorn Squash - Half an Acorn Squash, roasted and stuffed with vegetables, rice, and golden raisins sauted with curry and corriander, topped with Marc's tahini yogurt dressing and fresh cilantro. As beautiful as it is flavorful...

Salmon Patty Lunch - Marc's Fresh Salmon Cakes, made from wild baked salmon, Great Harvest bread crumbs, onion, garlic, and fresh herbs. Fresh Smoked Salmon Wrap - Fresh Salmon cherry smoked with Marc's special plum sauce and then baked, served in a wrap with jack/cheddar cheese, cucumber, tomato, onion, lettuce, and tahini-yogurt dressing and a touch of mustard.
Smoked Salmon Plate - 3 oz. of fresh salmon cherry-smoked with marc's plum dressing, served on a lunch platter with feta, raw veggies, pita bread, olives. A side of Marc's homemade plum sauce for dipping.
Fresh Steelhead Trout Wrap - Fresh Steelhead baked with garlic and lemon, wrapped with jack/cheddar cheese, cucumber, tomato, onion, lettuce, and tahini-yogurt dressing. NO.. I did not catch it!!

Absolutely Fresh Salad Bar - Fresh varied leafy greens, all fresh veggies, sunflower seeds, bean salad, potato salad, imported olives, and home made dressings from scratch - Vinegarette with fresh herbs, and Yogurt with Cucumber and Garlic.
Veggie Avocado Wrap - Jack/Cheddar Cheese, cucumber, tomato, onion, lettuce, tahini-yogurt dressing.
Vegan Wrap - No Dairy or Meat products. Cucumber, tomato, peppers, avocado on request, lettuce, onion, and fresh hummus.
Custom Fresh Juice Bar - Select from a wide variety of vegetables or fruits.. and of course we have many suggested blends. Soup Cellar Smoothies are fresh juice drinks blended with banana, using seasonal fruits for flavor, such as strawberry, pineapple, peach, pear, or orange.
Zingers are juice drinks with lemon and ginger to give them a spicy kick. Favorite zingers include pineapple, pear ("Melanie in the Morning"), and orange. Vegetable juices with beets and carrots are rich and velvety, and can be sweetened a bit with some apples. Marc's Surprise consists of Apple, Carrot, Beet, and Ginger, and it is sweet, rich, and spicy all in one!
